Yes, it’s true! I found a gluten-free vegan frozen pizza, which can be a life saver on nights I am too lazy exhausted to make a proper meal. It has a crust that is a little bit crackery–soft and crumbly at the same time–and the “cheese” melts rather poorly, but it still tastes pretty darn good. Especially with Sriracha dotted on top. My biggest complaint is that it isn’t a lot of pizza for the price, so we supplement with salad or soup.  Amy’s Rice Crust Spinach Pizza can be purchased locally at Common Ground or Strawberry Fields (it’s currently on sale at Common Gound, FYI).

Also, those roasted beets and polenta make for some colorful left-overs when haphazardly tossed in a pot and reheated! There aren’t too many foods found in nature that can turn a humble batch of polenta into Barbie’s Dream Dinner.
