Last Friday, Casey and I celebrated our one month full-on vegan anniversary. Legend has it that a small Vietnamese café in our neighborhood offers vegan pho on the first Friday of every month. We arrived at the café to find a note posted on the door… no pho tonight, instead it would make its appearance later in the month. We decided to check out the menu anyway, and guess what!?! We did actually manage to have a great, vegan meal! Xinh Xinh Café  boasts a fairly large vegetarian menu, although most of the options are not vegan. As an example, the tofu banh mi comes with mayonnaise, so be sure to ask if there is a vegan option before ordering. We were delighted by the Tofu Cake Spring Rolls, which came with a side of vegan lime fish sauce. You read that right, they managed to veganize fish sauce! They were fresh and savory, with exciting textures, and the “fish” sauce was the perfect combination of sweet, salty, and a touch tart.

We followed up with the Bun Cha Gio, which includes fried veggie spring rolls served atop vermicelli and greens, also served with the lime “fish” sauce. The fried rolls were delicious, but to be fair, almost anything tastes great fried. The noodles were very filling, but I wish there would have been a bit more of the greens.

The prices were incredibly reasonable; two entrées and an appetizer run about 20 dollars total! We will definitely be making a return visit, and, seeing as they have announced that vegan Pho will be available tomorrow through the weekend, it looks like we will be headed back sooner rather than later.
